The concept from Kanthi and Diego is a mix of Indian, Latin American and Mediterranean cuisine but this is not fusion. They are cooking food they know and love, mostly over a blazing hot wood fire.
Palmito has gone from strength to strength since opening in late 2022 and has recently picked up plenty of national praise (without searching for it) from the likes of Giles Coren, The Good Food Guide and the Michelin Guide.
